Chef Arthur Chen is a master of his craft in the pastry world, and his role is based on a foundation of talent, hard work, and team leadership. As Executive Pastry Chef, he oversees all aspects of the pastry and dessert program at the Edmonton EXPO Centre – from menu development and recipe testing to production and presentation.
“My role is about balancing creativity with consistency,” Chef Arthur says.
At a multi-hall exhibition venue that welcomes and feeds more than 1.7 million visitors each year, Chef Arthur and his team produce a large volume of desserts and pastries for events of all kinds. Ensuring that every offering meets a high standard of excellence is no small feat. Few exhibition venues of this size and scale maintain a dedicated in-house pastry team catering entirely on site, making the operation especially distinctive within the industry.
For Chef Arthur, the experience of enjoying a dessert is just as important as the dessert itself. From visual presentation to the overall dining experience, he works to ensure every dessert leaves guests with a memorable and delicious experience.
Equal Parts Art and Science
Known for its precise and challenging nature, pastry is both an art and a science. That is exactly what drew Chef Arthur to pursue his passion and eventually become the Executive Pastry Chef for the Edmonton EXPO Centre.
“I loved the challenge of transforming simple ingredients into something beautiful and memorable,” he says.
His journey in the pastry arts led him to train in a variety of kitchens alongside many talented chefs. Each of these experiences helped him refine his technique and discover his style as a dessert and pastry expert.
Today, he gets to combine his talent and passion with innovation, leadership, and hospitality as he works with his team to support one of Western Canada’s largest event venues. Each of Chef Arthur’s masterpieces begins with a source of inspiration.
“Whether it’s from seasonal ingredients, travel experiences, cultural flavours, or a specific texture or presentation idea, every new dessert or pastry begins with inspiration,” he says.
From there, he begins the process of testing combinations, refining recipes, and finalizing a flavour profile – taking the initial idea and turning it into something tangible in the kitchen. Once the dessert itself is complete, Chef Arthur explores presentation ideas, portioning, and determining how the item fits into the overall menu. After the dessert and visual presentation are finalized, he trains his team with care and precision to ensure that every plate is executed with confidence and consistency during service.

For Chef Arthur Chen, the most rewarding part of his role is seeing guests enjoy his desserts while creating memories they will never forget. Creating an outstanding culinary experience for thousands of guests demands immense hard work, but seeing that transform into a memorable moment for the guests makes it all worthwhile.
